How to make pistachio shortbread

The Components
150 g Sweet & More flour, equivalent to 1 cup + 2 tablespoons

40 g crushed pistachios, equivalent to ¼ cup
52 g powdered white sugar, equivalent to ⅓ cup
ㅤ
115 g melted butter, equivalent to 8 tablespoons
ㅤ
5 g vanilla, equivalent to 1 teaspoon
Steps to make pistachio shortbread
(The oven must be monitored) + (The different sizes of the pieces and trays used in baking must be taken into account)

Melt the butter and then let it cool to room temperature.

Grind the pistachios using an electric grinder or manually.

Mix the sugar with the flour and vanilla, then add the melted butter to the dry mixture.

Knead until you get a soft dough that is easy to shape.

Add the pistachios and knead until the dough is smooth.

Divide the dough into pieces weighing 7.5 grams each, or about one teaspoon, then shape the dough into circles by hand or using molds.

Garnish with a pistachio nut or a pistachio slice on top and arrange the pieces on a baking tray lined with parchment paper, leaving suitable spaces between them.

Bake in a preheated oven at 180°C on the middle rack for 8 to 10 minutes, from both the top and bottom, until golden brown on all sides, taking care to avoid over-browning.

Remove from the oven and let the pieces cool on a cooling rack until they reach room temperature. Pack in airtight containers and store in a cool, dry place away from light.
