How to make a Tawa (Bakhmurri)

260 g Golden Crunch flour, equivalent to 2 cups

160 ml warm water for kneading

Honey, date molasses, syrup, or powdered white sugar, optional
1 g salt, equivalent to ¼ teaspoon

16 g milk powder, equivalent to 2 tablespoons

2 g black seed, equivalent to ½ teaspoon, can be replaced with a pinch of saffron + 2 g cardamom, equivalent to ½ teaspoon
Steps for making a tawa

We put the flour, sugar, nigella seeds, milk and yeast into the mixing bowl, then we attach the hook and run the mixer on a slow speed until the dry ingredients are blended.

Add the water gradually, then increase the speed to medium while continuing to knead until the dough wraps around the hook. Then add the butter and continue kneading for 5 minutes.

Remove the dough from the bowl and divide it into two equal balls, then cover them to rest for 30 minutes in a warm place.

Roll out a ball of dough on a floured surface to a thickness of 1/2 cm, ensuring the surface is smooth and free of holes. Cut out circles using a cookie cutter. Gather any excess dough, knead it again, roll it out, and cut it again. Repeat this process until all the dough is used

Cover the dough with plastic wrap or a clean cloth and let it rest for 10 minutes.

Heat a generous amount of oil over low heat until it reaches a suitable temperature for frying, then add the dough pieces, 4 or 5 pieces at a time, or according to the size of the pan used.

Stir until golden brown, then remove from the oil and place in a strainer to remove excess oil.

Then they are tossed in honey, date syrup, or powdered sugar, arranged on a serving plate, and can be served.
