How to make stuffed luqaimat (dumplings)

260 g Golden Crunch flour, equivalent to 2 cups

5 g softened butter, equivalent to 1 teaspoon
6 g yeast, equivalent to 1 teaspoon

Cheese squares or triangles for the filling, or chopped chocolate bars

1 g salt, equivalent to ¼ teaspoon

8 g milk powder, equivalent to 1 tablespoon

Honey, date molasses, sweetened condensed milk, or syrup for drizzling over the cheese filling, and caramel sauce or chocolate for drizzling over the chocolate filling
Steps for making luqaimat (dumplings)

We put the flour, sugar, vanilla, milk and yeast into a mixing bowl, then using the dough hook we knead at a slow speed until the dry ingredients are well combined.

Add the water gradually, then increase the speed to medium while continuing to knead until the dough wraps around the hook. Then add the butter and continue kneading for 4 minutes.

We divide the cheese cubes, each one into 4 parts, then we divide the dough into small balls, each ball weighing 10 grams, which is equivalent to a teaspoon.

We take a ball of dough and flatten it with our fingers, then we place a piece of cheese in the middle and gather the dough around it until it is well covered, then we shape it into balls. We repeat the same steps until the quantity is finished.

We arrange the balls in a tray sprinkled with a little flour or lined with parchment paper, leaving a suitable space between them, then we cover them and leave them to rest for 15 minutes in a warm place.

Heat a generous amount of oil over low heat until it reaches the appropriate temperature for frying, then place the dough balls in until the surface of the pan is filled.

Stir the balls constantly until they acquire a uniform golden color, then remove them from the oil and place them in a strainer to remove excess oil.

We dip the dumplings in syrup, molasses, or honey, then place them on a serving plate.

If freezing: After stuffing the balls, arrange them in a tightly sealed container lined with parchment paper, leaving a suitable space between the pieces, then store them in the freezer until needed. Take them out of the freezer an hour or more before frying.
